Costa Rica Las Lajas Natural Black Diamond comes from Las Lajas, the family micro mill of third-generation producers Doña Francisca and Oscar Chacón in the Cumbres del Poás area, on the foothills of the Poás volcano in Costa Rica's Central Valley. The Chacóns measure the brix of their cherries to pick at peak sweetness, and this natural lot is patio dried.
